Production Item Count Overview

Production item count helps prep cooks who need to know at a glance how many of each ingredient is needed to fulfill all of the orders that have been sent to the kitchen at any given moment. This ensures that high volumes of orders can be fulfilled quickly without taking time to read through dozens of tickets on the KDS.

How does production item count differ from all day display? While similar, All Day Display summarizes at the item level (e.g. 5 Double Cheeseburgers) while the production item count will summarize at the ingredient level (e.g. 10 Burger Patties).

Note: All Day Display takes an extra button click to complete, and production item count is always displayed at the bottom of the device. To learn more, check out this Toast Central article: Get Started with KDS All Day Display.

Additionally, production count is only available for items, and not modifiers.

Toast Web Configuration

Follow these steps to create production items:

  1. In Toast Web, navigate to Kitchen Kitchen stations > Production items.
  2. Select + Add to create a new production item. These can be items such as beef patties, wings, chicken breasts, etc. They should be any items that are ordered at high volume in your restaurant that you wish to aggregate on your KDS device.
  3. Save and publish your changes.

Once you've created your production items, you'll need to attach them to specific menu items. You can do so by following these steps:

  1. Navigate to Menus and find the item you wish to track production items for.
  2. Scroll down to the Production Items setting under the Preparation section.
  3. Select the related Production Item from the drop-down menu.
  4. Enter the quantity of the production item.
  5. Save and publish your changes.

Repeat this process with each item that has a production item you want to track has been configured.

Device Workflow

Once production items have been configured in Toast Web and on the device, you won't need to do any additional work. Your production items will appear at the bottom of your KDS screen.

The numbers will only include fired items. If you're using course firing or item fire by prep time and something hasn't fired, the item count will not include that item. The item count will decrease when the related item is fulfilled.

Include Held Tickets in Production Item Count

As default, any held tickets are not included in your production item count. However, you can easily change your settings so tickets that are held via automated and expediter course firing are included in your production item count.

Note: This feature will only be available when the KDS module is enabled and will not include any items marked as "hold" on the POS device.

  1. In Toast Web, navigate to Kitchen Pacing Meal pacing.
  2. Check-off Enable course pacing for the Course Pacing setting.
  3. For the Sending Courses setting, select Send all courses to kitchen immediately.
  4. For the Held Tickets setting, select Show at both expediter and prep stations.
  5. The option for All day view with held items will show up. Select Include held items in all day view and production item counts
  6. Save and publish your changes.
